CSA - Weeks #13 and #14 (The Finale)

Obviously, this post is long overdue. It has been over a month since the last delivery for our CSA, but believe it or not, I didn't get the last of the veggies cooked up and frozen until this last weekend. With the last of my root veggies starting to get pretty wrinkly and sad, I finally powered through and cooked up two last batches of soup for winter lunches.

The regular photos of the last two deliveries are posted below. The real purpose of this post, and the reason I waited until the cooking was done to post it, is to report on my food storage results. Using ingredients from the CSA, we made and froze the following for our enjoyment over the winter, most of which with little to no packaging waste. This is on top of the many meals we made and ate out of the veggies over the summer.


  • Chard and Lentil Soup (8 servings)
  • Chickpea Stew (4 servings)
  • Swiss Chard & Beet Lasagna (3)
  • Turnip Green & Beet Lasagna (3)
  • Walnut Arugula Pesto (5 cups)
  • Carrot Coconut Lentil Soup (5 servings)
  • Almond Arugula Pesto (10 cups)
  • Carrot & Yam Soup (7 servings)
  • Beef & Cabbage Soup (8 servings)
  • Beet & Sausage Stew (7 servings)
  • Parsnip Soup (5 servings)
  • Beet & Beef Soup (5 servings)
I'm pretty impressed. That's 49 work lunches for the winter, plus some nice stuff for dinners at home.

As for the last two deliveries, here they are.

Week #13
Celery, tomatoes, garlic, peppers, leeks, potatoes, carrots, onions, parsley.



Week #14
Kale, parsnips, cabbage, onions, carrots, tomatoes, squash, potatoes, garlic, peppers, beets.



I loved my CSA. Can't wait till next year!
